Heat a large nonstick sauté pan over medium heat. Add 1 tablespoon of avacodo oil and wait until hot. Place the potatoes in the pan and cook until potatoes are golden brown. Place the potatoes in a large bowl on the side.
Using the same large nonstick sauté pan over medium heat. Add 1 tablespoon of avacodo oil. Then add the mushrooms, red peppers and onion. Sprinkle the spices over the vegatables as they cook. Place the vegatables into the same large bowl the potatoes are in.
Mix the potatoes and vegatables together and use any additional spice.
